This Pink Beet Latte Will Make You Want to Skip a Lid

Juicers swear by the powers of produce, and they’re onto something. You can tailor a drink to boost your gut health, show your skin love, or even combat a hangover. And if it’s energy you’re after, beet juice is a gem. In fact, many athletes take beetroot shots to give themselves an edge, and studies suggest that it does in fact boost performance.

Thing is, if caffeine is your lifeblood, swapping your coffee for juice is easier said than done. But drinking your juice in latte form can feel like less of a shock to your system since it has the same creamy, hot feel as the real deal. Start with this Instagrammable beet juice–filled latte that Lorna Jane Clarkson included in her new book Eat Good Food. The Aussie activewear designer offers the recipe as a warm or cold drink that you can store in the fridge for up to three days. Even better, it’s vegan and naturally sweetened with just a hint of maple syrup.

Use it for morning energy, a workout boost, or a healthy dessert—either way you’ll get a little superfood-boost in the process.

Deliciously Pink Latte

Prep time: 10 minutes

Serves: 2

Ingredients

  • 2 large beets (400g), coarsely chopped
  • 1 1/2 cups almond milk
  • 1 teaspoon pure maple syrup (optional)
  • 1/2 teaspoon ground cinnamon

Directions

  1. Push beets through a juice extractor into a jug. You should have about 1/2 cup of juice.
  2. Place beetroot juice in a medium bowl with almond milk; whisk to combine.
  3. Whisk in maple syrup and cinnamon. Serve chilled or warm.
